See, I know for sure it's not a PSU issue because I can run furmark's CPU and GPU stress tests at the same time, even with +20% power limit and it runs just fine. I might have to look into getting a new MB since that's currently what I find the most likely culprit. Also, are you certain it is a thermal shutdown not a power related shutdown? More
often than not, shutdowns point back to an inadequate, faulty or dying PSU. A bad
PSU can also cause thermal issues, particularly if the voltages are low causing
the amps to climb and generate excessive heat.

As for the sensors, many 3rd party temp monitoring apps misread sensors, even if
they appear to be working they may not take into account thermal offsets or other
such mechanisms present in the BIOS. As far as I am aware, sensors that report
high temps and are read with an offset are set up this way for efficiency and
accuracy sake. Someone explained it to me at some point but I don't recall the
exact details right now. It has something to do with controlling the fans IIRC
and is quite common. This is why so many 3rd party apps often report incorrect
temps on non standard sensors, most boards use similar sensors for things like CPU,
PCH and power phase temps so these tend to be accurate but other, more obscure
sensors may not be calculated correctly in the software and read wrong.

(on HWINFO64 it's registering AUXTIN1, 2, and 3 are all ~100c, at 103, 101, and 98c respectively.)

I'm having this exact issue on this EXACT model of board. Latest bios version. TMPIN6 is registering as 104c (108c max) and TMPIN 8 is registering as 97c (101c max). Both sensors are definitely working properly as they're going up/down, and the motherboard is even shutting my computer down because it's hitting the thermal safety. HWMonitor is a 3rd party monitoring app, it does not read all the board's sensors
correctly. This is often the case with 3rd party apps. HWMonitor could be reading
any number of sensor outputs that have nothing to do with temperature and misinterpreting
them.

It's not correct and it isn't something to worry about. If you are concerned you
can try the official temp monitor for your board "ASRock Motherboard Utility ver:3.0.499":
