X370 ITX/ac DOES support NVMe RAID, the option for it: Advanced/AMD PBS/NVMe RAID after enabling you will also have option to use PCIe Bifurcation (the option will aprear bellow the NVMe RAID one) in a 1 x 8X or 2 x 4X configuration with 2200G/2400G CPU beacause Raven Ridge only offers 8X total PCIe 3.0 lanes for the PCIe slot, if using with a 1xxx Summit Ridge or 2xxx Pinnacle Ridge CPU you will have the option to split 1 x 16X or 2 x 8X
You need to use a bios newer than 3.40, if using Ryzen 1xxx class CPU update to BIOS 3.60, if using Ryzen 2xxx class update to latest available version.
If you will test with the ASRock Quad M.2 expansion board, please let us know how things go

Have to say I love your 3xraid0 TR rig. I hear its an understandably popular combo for workstations - boot on the raid. It must be awesome with 4 channel memory.

No need for an m.2 adapter card even on most moboS.

Its a watershed when storage gets to be as fast as slow memory.

AMD says NVMe support should be available soon for X370, waiting on BIOS from board vendors.  It should look very much like X399.  Please open a ASRock ticket and see if you can get them going.  Thanks and enjoy, John.

thank you for the update, x370 gaming/itx bios does NOT list NVMe raid mode and the Bifurcation setting is only 8x/8x.

ChinStrap, please open your UEFI-Advanced-AMD PBS and see if you have the NVMe RAID mode seting.  If you don't, I see no way forward.  Please take and post a screenshot (F12 with a FAT formatted USB plugged).

ChinStrap, I DLed the instructions and Floopy drivers from my X370FPG board page (no longer have) and it has the same instructions for the X370 as for my current X399.  The drivers are older.  I am still searching and learning but how about a quick test?  I wrote and used a simple step-by-step to create my RAID0 - my current boot device.  Please see my signature for my specifications.  If you can give two NVMe drives (will be erased/formatted) to the test, then please try creating an array using these instructions:

If you are creating an NVMe RAID:

1. Boot into BIOS, hit F9 then F10
2. Boot into BIOS, in PBS set NVMe RAID to Enabled
3. Set CSM to disable
4. F10
5. boot into BIOS
6. use RX2 to delete all drives you want included in the RAID and any 
    arrays not needed
7. Create array, selecting each of your drives, one by one
8. F10
9. Boot into Boot Menu (F11)
10. Select install USB.  You should see UEFI only version.
11. Install the RAID drivers in this order:  
   1-rcbottom - all your drives in the RAID will disappear
   2-rcraid - you will see your one RAID
   3-rccfg - you are good to go!
12. Install W10 on the RAID. 
13. Enjoy.

I still plan on digging around. Who knows, maybe I can get it to work. If not, I guess i'll have to live w/ my 960 Evo's current performance. 100% 1st world problem here.
