So I've been blessed/cursed with an i7-8086k from the Intel sweepstakes but I don't have a motherboard/cooler/RAM/power supply/hard drive/case to use it with. What motherboard should I use with this thing? Also, is it worth waiting a few weeks for Z390 motherboards to come out?

When it comes it unlocked higher end CPUs it's always best to look at the top of the product stack for a board. You will want something that can handle the extra power needed for overclocking while still being able to keep the VRMs cool. Getting a budget oriented board for a K SKU CPU is not the best idea.

Z370 Fatal1ty Gaming 6 or i7
Z370 Taichi

Z390 Phantom Gaming 6 or 9
Z390 Taichi/Ultimate

For an 8086k those are the ASRock boards I would be looking at. One of the key reasons I like ASRock products is because with them, you get exactly what you pay for. If it costs more, it delivers more. The same is true the other way, when it gets cheaper, things are cut out to save cost and if the removed features are not immediately apparent (no 10gb/s LAN with Taichi vs Taichi Ultimate) then it typically means the savings come from using cheaper components on things like the VRM.
