What is the fastest DDR5 ECC RAM memory supported? Any issues with 5600 MT/s ?

It depends on the processor you put into it.
Official AMD specs says... 7000-series supports upto 5200MT/s 8000G-series supports upto 5200MT/s(**) 9000-series supports upto 5600MT/s
** ECC only supported on PRO variants on monolithic APU dies.
In reality, I imagine 5600MT/s will work just fine on all of them. I'm running two sticks of MTC20C2085S1EC56BR on my B850M-X (WiFi) with 9800X3D at stock speed (5600MT/s 46-45-45-90). No problems.

I imagine 64GB ECC UDIMMs will be available at some point from these companies. I don't really need it, but it'd be cool to have 128GB with two sticks.
Just make sure to get UNBUFFERED DIMMs.

I looked at ASRock's workstation motherboard and I see this specified:
Max. DIMM Frequency 5600 MHz (1DPC); 3600 MHz (2DPC)
