I just wiped out my recently installed Windows 10 Pro on X570 Taichi. Unable to boot now. Trying to figure out what to do next.

I am pretty experienced with building PCs, configuring storage, etc. I have put several PCs together without any issues, hardware all works, etc. Reasonably competent with Windows 10.

My questions:

1) Any way to recover the existing Windows 10 Pro installation, or do I have to reinstall? I tried rescue from USB installer, it doesn't see anything.

2) Is it worth it to try use RAIDXpert2 to mirror a pair of 8TB SATA while booting from non-RAID NVMe SSD? Or should I just mirror the 8TB drives using Windows 10 software RAID?

3) If I am going to try to use RAIDXpert2, how do I configure the BIOS prior to installing (or after installing if I can recover my existing Windows install)?

I did try reading RAIDXpert2 docs but I find it all clear as mud. I have configured EMC FibreChannel storage arrays without any problem, but I find configuring it on X570 motherboard a bit confusing.

My hardware configuration:

ASRock X570 Taichi with 5800X and 64GB PC3200 RAM (2 DIMMs)
Samsung 970 Evo Plus 2TB SSD in M.2 slot #1
8TB Western Digital SATA disks in SATA1 and SATA2

What I did:
- Installed Windows 10 on NVMe SSD with minimal BIOS configuration
- Tried to configure RAIDXpert2 afterwards. Enabled SATA and NVMe RAID, deleted three existing RAID arrays, one for each SSD/disk. Configured one RAID1 with the two 8TB SATA disks. It wouldn't boot. Tried turning off NVMe and SATA RAID, still won't boot. Tried resetting BIOS to defaults, still won't boot. Tried booting from install USB and recover boot disk, but it doesn't find anything to recover.

What I want to do:
- Recover my already installed Windows 10 on the SSD if that is possible.
- Configure 8TB SATA as RAID1

If that doesn't work, then plan B:
- Configure BIOS properly to work with RAIDXpert2, if possible
- Install Windows 10 on non-RAID NVMe SSD
- Configure 8TB SATA disks for RAID1

Any advice is welcome!
