Can someone tell me if this will work on my Z690 Taichi before I build it or would I be better off with something else, just trying to get as much storage as possible.

It's impossible to tell, I checked the ASRock website, but the ASRock Hyper Quad is not listed in the support.

What is important, is that you can divide the x16 slot with 16 lanes, into 4x 4 (bifurcation) lanes, But Intel does not bifurcation.
So I would say, you will not get it to work with all 4 M.2's on the card, likely if will be x8, x4, x4.
