I have set the DRAM Frequency in bios to 6000 but on the left next to the setting it still says 4800, like in the guide here from ASRock on page 29/chapter 3.3:

(except that in the guide it is set to auto)
And in Windows in task manager it also says 4800, so I assume my DDR5 is not running on the speed it should. How can I set set it to 6000? I mean i already did in the BIOS in OC Tweaker don't understand why it is not doing what it is set to do.

ok now it works somehow, I don't know what I changed, but in windows it says 6000 now.
I just went back to bios again, switched the profiles back and forth, but then discarded changes, so I don't know why it works.

I'm having the same issue with my DDR5-6000. If I use the EXPO setting, it won't go into 6000. If I do EXPO and then move from AMD AGESA Default to Competitive, it does work, but there's a red voltage set and entering Windows it's not stable.
I'm at a loss...what other settings other than EXPO have you changed from defaults?
