Runs at 6400mhz with two sticks of ram but goes back to 4800mhz if I use 4 of the exact same model ram. If I turn on XMP with the same configuration, it defaults to 3600mhz.

It seems to be an issue with other boards as well and some have found a way to get the full speed by tweaking voltages.

I've tried some of the tutorials but I'm not having any luck.

Should I just by 2 x 32GB of ram and move on or is there hope to get it running correctly on this board?

I always recommend 2 higher capacity modules over 4 lower capacity ones. Firstly,
performance is always better on a dual channel setup. Secondly, it's less strenuous
on the Memory controller in the CPU. Considering the IMC (memory controller) is one
of the most common failure points on modern CPUs I always try to keep the load minimal
to get the most out of my CPU's lifespan.

Just make sure your board will support the RAM you get, either on the QVL on it's
product page:

Or on the QVL for the memory itself.
