Anyone know disables the UEFI mode in the configuration of the Z77 Extreme 3?

No, because it cannot be done. No switch for changing to the old BIOS interface or firmware exists.

Even if there was such a switch, you would still be using UEFI firmware running in BIOS emulated mode, just without the mouse supported user interface.

The few boards that have that option simply change to the primitive interface that BIOS firmware was only capable of supporting. Actual BIOS firmware has not been used much if at all for about three years.

Your board has: 64Mb AMI UEFI Legal BIOS with GUI support

The term BIOS is just used so everyone will know what it is. The giveaway it is UEFI firmware is the size, 8MB. BIOS firmware has a maximum size of 8Mb/1MB.
