new buyer for x299e-itx/ac and need guidance

Hello.I have a 7960x and want to jump to the x299e-itx/ac board but after reading all of the reviews ive got stuck with questions.

If someone have the time, please help a fellow not to invest wrongly xd

1-Is one 8pin really enough for the cpu?(I mean at stock sometimes my 7960x and even the 7980xe do draw more than 165w and a 8 pin only gives 150w if I'm not mistaking.)Is there performance loss?

2-If I get the board, which bios shoud I get? The beta 1.03 or maybe the 1.40? I don't want to go higher as the site states that from 1.50 and up we get the microcode security updates that cripple CPU performance?(paranoid maybe)

3-I saw a screenshot that there is "Cooling solution" option in the OC tweaker tab released in beta bios 1.03.I don't want to OC when I get the board, but what option shoud I choose? I do have a 240mm rad(cryorig a40). Does the ¨¨air cooling¨¨ option cripple the cpu performance or maybe the ¨¨water¨¨cooling tab will make the cpu behave as it shoud?
I repeat, I don't OC,just want the ¨¨real¨¨stock performance of the cpu for a sff workstation I plan in the raijinteck ophion evo.
