I'm running Linux, not Windows. I set the framebuffer and the X display server to use the Intel card and it works fine, but would prefer to have everything (including the UEFI screen) on the iGPU.
I'm using this computer as a double seat setup: I have a monitor connected the intel card and a keyboard and a mouse I use for work (programming and normal desktop usage), and a monitor connected to the nvidia card with keyboard, mouse and some controllers used for gaming.
Usually I work on this computer on the intel side, while my girlfriend plays videogames on the nvidia side (using Windows in a VM with PCI passthrough).
Having UEFI appearing on the gaming side monitor is a bummer for me.

About the cables you're (almost) right: a cable connects the HDMI port of the nvidia card to the HDMI port of a monitor, while another cable connects the HDMI port on the motherboard with the DVI port of a monitor.
The monitor I'm using for gaming doesn't have a DVI port, but once I'm home I'll try to connect the nvidia through DVI->HDMI and the intel through HDMI->HDMI and will let you know!

Let me guess, the connection between the video card and monitor is either DisplayPort or HDMI, and the connection between Intel iGPU and its monitor is DVI?

I doubt there is any way to change the way it works now. The video card will always be primary, at least when the PC starts.

You can change the Primary monitor in the Windows Display option in Control Panel, and with the NVIDIA Control Panel (if you installed a driver for the video card), which will be the primary monitor once Windows boots. If that works for you, you're done.

But before Windows starts, the video card will win. I also find DisplayPort and HDMI have precedence over DVI, at least on the same video source.
