I have very limited knowledge of that particular board of yours. I'd suggest you poke the forum a bit and see what other people are using.

If not, start evaluating the versions one by one. Remember, do a proper CMOS clear after each iteration.

Also, when DOWNGRADING (as you did) there are leftovers from the previous (higher) version in the UEFI. This requires a DOS re-flash in order to get rid of the UEFI leftovers.

Try and read the other posts here. Lots of them have very useful information.

Which is stable? 3.30 or 3.10? 
Con 3.10 molti falliscono all'avvioWith 3.10 a lot of start fail

I had upgraded from 3.10 to 4.10 because I had problems with 3.10. First I had changed also the PSU.

With 3.10 a lot of start fail; black screen and fans that turn at max.

As Tony said, even their flagship is left on an old UEFI for quite some time.

Also, the UEFI these guys produce are horrible at best, IMO. Stick to a stable one and hope.

I had installed the 4.10 version now disappered from Asrock BIOS support page. The PC many times don't start, corrupt HD saved data, crash and lock the machine.
ieri non ha riconosciuto ilyesterday it didn't recognize the
Detected language : English

I have donwgrade to 3.30 version. Now the PC won't start; yesterday it didn't recognize the USB data key.

Only 3.10 version is it affidable?

anyways more importantly
i would advise
you DONT want it

its not working correctly ,and needs tweaking stick to your earlier bios for the moment
