I have a z370m-itx motherboard I bought late last year I finally got around to the build and the problems are:  GPU not recognized,  I've tried 2 known good working cards (rx 560 and gtx 760) and neither shows up in display adapters. PSU is good (650 watt Rosewilll), cards are powering up. I have  PCIE graphics enabled in BIOS, all the chipset drivers installed etc etc.

So I figured it must be the BIOS as I have the first version installed p1.20  So I followed the instruction from asrock and updated to the p1.60 version, the flash appeared to work fine.  It flashed then rebooted and nothing.  no post.

This is my first ASrock product and so far it's looking llike my last.

Did you do Instant Flash or Windows Flash ? Were you overclocking anything when you flashed ?
Try resetting BIOS per Xaltar's explaination:

So I left my monitor hooked to motherboard IGPU and the update switched the output to the GPU and turned off the integrated graphics.  After messing around with clearing CMOS and pulling the battery I figured this out.

I have the system running now it just crashes in every game I play.

This is a known good working card (using the gtx 760) all drivers up to date.

Did 4 passes with memtest, zero errors.

The voltages in BIOS look good.

Swapped the one game to my SSD but still crashes 1-5 min in game, I'm watching temps nothing seems abnormally high.  CPu runs a bit hot at 65c ish.  this is the I5-8400. Ran it with the cover off and a big house fan on it, still crashes.

This computer is for my daughter and she's not happy!!!

But it is running minecraft like a champ lol

What cpu cooler are you using ? My 8700 runs about 25c in Windows doing normal things. That is on air cooling (Intel BXTS15A), it does hit near 70c when running very hard but that is still very safe.
You should download HWmonitor from cpuid and check all the temps, your system may not be cooling properly which could cause some of the issues you have.
