So, long story short, I tried to dual boot with windows AFTER installing ubuntu... stupid I know... after installing windows on a separate hard drive, my bios can no longer recognize the m.2 that previously worked no problem with ubuntu on it. Any help would be appreciated

What SATA port did you plug the separate hard drive that now has Windows on it? If you unplug that windows drive, does your M.2 automagically reappear?

The hdd is in port 2. Unhooking it doesn't fix the issue. I've also tried f9 in boot to reset that as well. Been working on it for 2 days now and I'm out of ideas.
