All motherboards I've ever owned have displayed RAM, all connected drives, etc. on the boot screen, but my ASRock x299 Creator doesn't, and I can't find an option for it, only the option to turn off the Logo, which I've done, but it still really doesn't show much information (although I do really like the post codes in the lower right corner). Nothing critical, but I do like seeing that information during boot. Is there a way to do this with the ASRock BIOS?

In UEFI (it's not the same as BIOS, although for convenience we still call it that)this information is usually not shown.
When you press Tab during boot, you should see some information, but the screen that you are used to, is no longer available.

When I press tab on my Asrock Z690 bios boot screen, nothing happens. What information should I expect to see when pressing Tab? How can I get this to work?
Although Pressing Tab has no effect, computer does boot normally.

that's correct.
You don't see the components during boot.
Tab will only show which board and UEFI version.
So what you want, is not possible.
When you want to see which boot device is available you press f11 to get into the bootmenu
