So I have been playing around with other OS installs and in the UEFI(bios) there is a list of boot devices that no longer exist and persist even when I remove all the storage media.

How do I remove them?

Yeah the BIOS 1.10 was a bit buggy, you should consider updating to BIOS 1.30 or 1.50. I have 2 Pro4 boards and they both run fine with those BIOS (one is 1.3 other is 1.5). I do NOT suggest updating BIOS above 1.70 due to other issues with included Intel microcode update BS in 1.80+.
Before updating BIOS I would write down any important settings you made, reset current to Default (and make sure it runs ok) then update if those old UEFI boots still show after reset.

Hey thx!
Yeah ill update the firmware to 1.5 and see if that fixes it. Ill let this thread know if it resolves the issue just in case someone else has the same problem.

Update:  The bios version numbers now go up to version 2.0 https://www.asrock.com/mb/Intel/Z370%20Pro4/index.asp#BIOS
However I tried to download the windows installer version 1.5 and it tells me that the bios version is not compatible with my mother board.

I am certain this is my motheroard model etc as:
msinfo32,
systeminfo,
wmic baseboard get product, manufacturer

...all yield the same result.

I also found this, seems someone has the same issue trying to upgrade their bios on the same model:

Well I guess I'll have to wait then :/

Sorry I missed that it is an iBuyPower OEM Asrock board. The retail BIOS from Asrock will error because iBuy alters the bios to add their logo, etc. A friend with an Asus z270 from them had the same issue so you will have to contact iBuy to see if they have an updated bios.
