Yes, most M.2 SSD should work. Check this list for already tested and supported SSD for your motherboard model: https://www.asrock.com/MB/AMD/A320M/index.asp#Storage
It's always a good idea to google if your desired SSD model has some issues/incompatibilities. |

PCIe v2 is pretty-much extinct on the desktop nowadays --- everything is v3 --- so the label is pretty pointless. "Ultra" == 4x PCIe v3 lanes == ~4GB/s maximum transfer speed.
