I tested UEFI 3.61 with X570 and Ryzen 9 3900X.

RAM: G.Skill F4-3600C16Q-32GTZKK (CL16-16-16-36 1.35V
32GB (4x8GB)).

I enabled: XMP 2.0 Profile 1: DDR4-3600 16-16-16-36 1.35V

The system is unstable and hangs when running a RAM stresstest.

Reverting back to 3.40 fixes it. There must be some regression on 3.61 (I haven't tested 3.60).

The instability is still present with BIOS 3.80.
