I recently purchased a Samsung 970 EVO NVMe M.2 Hard Drive for my PC without doing nearly enough research into it. I have the Z97 Anniversary board with all 3 PCIe 2.0 and 2 PCI slots available but am having trouble finding an adapter for the EVO. Any advice/help would be appreciated.

I got an NVME to boot from PCIE slot. The following thread is for z77 but maybe some of it applies to you. Check on Amazon and just pick a PCIE adapter for m.2. I think I got the YATENG but other people have had success with other ones as well.

Or if you don't need the speed and the associated headache of installing, just get a SATA SSD. I wasn't able to but a lot of people were able to do it seamlessly.

I surely would not go through the headache as suggested 2 posts above and install some "modified" BIOS from third party.
According to https://www.asrock.com/MB/Intel/Z97%20Anniversary/index.de.asp#BIOS the newest BIOS supports NVME, so you should be able indeed to boot from that samsung 970 NVME.
All you need is a "M.2 to PCIe 2.0 adapter", countless offers everywhere.

You can't get the full speed out of that samsung 970: https://forums.tomshardware.com/threads/m-2-nvme-ssd-to-pcie-2-0-x16.3395784/
but I wouldn't mind. Aside of better reading/writings speed, in daily operations you mostly can't experience a difference betweens NVME SSDs and standard SATA SSDs.
