Have to say I love your 3xraid0 TR rig. I hear its an understandably popular combo for workstations - boot on the raid. It must be awesome with 4 channel memory.
No need for an m.2 adapter card even on most moboS. Its a watershed when storage gets to be as fast as slow memory.

X370 ITX/ac DOES support NVMe RAID, the option for it: Advanced/AMD PBS/NVMe RAID after enabling you will also have option to use PCIe Bifurcation (the option will aprear bellow the NVMe RAID one) in a 1 x 8X or 2 x 4X configuration with 2200G/2400G CPU beacause Raven Ridge only offers 8X total PCIe 3.0 lanes for the PCIe slot, if using with a 1xxx Summit Ridge or 2xxx Pinnacle Ridge CPU you will have the option to split 1 x 16X or 2 x 8X
You need to use a bios newer than 3.40, if using Ryzen 1xxx class CPU update to BIOS 3.60, if using Ryzen 2xxx class update to latest available version. If you will test with the ASRock Quad M.2 expansion board, please let us know how things go
